meal planning monday-vol. 2, wk 8

last weeks menu plan was scratched because we were on the cabbage soup diet that i posted about the week prior.
it sucked!
i cheated!
i lost 5 pounds!
i may do it again, but i WILL cheat again. this girl likes her bread and cheese and that diet didn't allow me to have any...except for the cheats. the first thing i had yesterday morning...a big bagel with cream cheese. YUM!!! but i do realize the without my two favorite things, i can lose weight, so i agree to cut back...a little. i just need to keep it off. so far, my food choices haven't been bad. we'll see what happens the rest of the week.


monday-$5 footlong. after a week of cabbage soup, i was craving subway...at least it was a healthy craving, right?
tuesday-mexican chicken potpies
wednesday-cracker crusted tilapia, spinach salad
  • 4 (5.0 ounce fillet) tilapia (may substitute flounder, sole or orange roughy)
  • 1/2 (cup) saltine crackers, crumbled
  • 2 (tablespoon) lemon juice
  • Pinch (to taste) salt and lemon-pepper seasoning
  • 2 (tablespoon) olive oil
  1. Preheat oven to 375 degrees F. Crush crackers into crumbs. Season fish with salt and lemon pepper.
  2. Brush fish with olive oil. Top each fillet with cracker crumbs and drizzle with olive oil.
  3. Bake 7-10 minutes until cooked through and crunchy on top.
